BBQ Ribs |

2 kg | Eskort BBQ Marinated Ribs |
Onion Rings |
|
3 | large red onions, sliced into rings |
15 ml (1 T) | salt |
750 ml (3 C) | flour |
30 ml (2 T) | BBQ spice |
| oil, for deep frying |
Sweet & Sour Sauce |
|
125 ml (½ C) | pineapple juice |
125 ml (½ C) | light brown sugar |
15 ml (1 T) | tomato sauce |
30 ml (2 T) | sweet chilli sauce |
5 ml (1 t) | red wine vinegar |
Method:
BBQ Ribs
Braai the ribs for 15 minutes on each side, turning every 5 minutes. Do not burn.
Onion Rings
Season onions with salt and refrigerate for 10 minutes.
Coat onions with 500 ml (2 C) of flour and BBQ spice.
Refrigerate again while the oil heats.
Coat again with the remaining flour and deep fry the onion rings until golden and crispy.
Sweet & Sour Sauce
Stir all ingredients together in a saucepan over moderate heat until the sugar dissolves.
Bring to the boil, then remove from the heat.
Serving
Dress the onion rings with sauce and serve with the ribs.
