This flavour-packed cheesy bacon risotto is made with a touch of brandy to warm you up your spirits!

200 g

Eskort Rindless Streaky Bacon, chopped

45 ml (3 T)

olive oil

60 ml (¼ C)


500 ml (2 C)

risotto rice

leeks, chopped

2 cloves

garlic, chopped

5 ml (1 t)

rosemary, chopped

30 ml (2 T)

fresh thyme, chopped

5 ml (1 t)

nutmeg, ground

5 ml (1 t)

cloves, ground

2.5 ml (½ t)

cayenne pepper

45 ml (3 T)

vegetable stock

1.5 L (6 C)


125 ml (½ C)

Parmesan cheese, grated

60 ml (¼ C)

Brie cheese


  • Boil the water over a high heat, add the vegetable stock and set aside.

  • Add olive oil and butter to a large saucepan over moderate heat.

  • Fry the bacon, red onion, onion, leeks, garlic, thyme, rosemary, nutmeg, cloves and cayenne pepper until the bacon is cooked.

  • Stir in the risotto rice and fry for 30 seconds.

  • Add one ladle of stock and stir until the stock has absorbed.

  • Repeat until all the stock has been absorbed into the risotto.

  • Add the Parmesan cheese and brandy.

  • Allow to simmer for a minute.


  • Serve the risotto piping hot garnished with micro greens and a slice of brie.


  • This recipe contains dairy (lactose).


  • Butter (lactose): Use clarified butter (ghee) or coconut oil.
