65 ml (¼ C)

olive oil

750 ml (3 C)

Hearty Tomato Sauce See recipe


large aubergine, peeled and cut into cubes

400 g

pasta of your choice

125 ml (½ C)

Grana Padano cheese, grated


fresh basil


lemon, zest and juice

45 ml (3 T)



  • Boil a large pot of water and add 3 tablespoons of salt.

  • Add the pasta and cook until al dente.

  • Drain the pasta and retain 1 cup of the pasta water.

  • Preheat a large saucepan over a high heat.

  • Season the aubergine cubes with salt and pepper, and fry in olive oil until golden.

  • Slice the fillet into 2cm thick slices, add to the aubergine and sear the slices on all sides.

  • Add the tomato sauce and pasta water, and stir to combine.

  • Bring to the boil, then add the pasta and cheese, and mix well.


  • Serve garnished with a handful of fresh basil, lemon juice and zest.


  • This recipe contains gluten and dairy.

Pasta (contains gluten): Use gluten-free pasta or zucchini noodles.
Grana Padano cheese (dairy): As an aged cheese, Grana Padano is very low in lactose and can be tolerated by lactose-intolerant people but may be substituted for dairy-free cheddar flavoured cheese.
