Go-to Hearty Tomato Sauce base

This #JustDelicious homemade tomato sauce is the ideal base for a variety of wholesome meal options!

1 kg

ripe tomatoes, quartered


large onions, chopped


carrots, grated

1 bunch

celery, chopped

4 cloves

garlic, chopped

60 ml (4 T)

fresh thyme, chopped

820 g (2 cans)

tomato puree

200 g

tomato paste

65 ml (¼ C)

vegetable stock

250 ml (1 C)

Merlot (or any dry red wine)


salt and pepper, to taste

65 ml (¼ C)

olive oil


  • Preheat the oven to 200°C.

  • Place the tomatoes in a large oven dish, season with salt and pepper, and bake for ten minutes.

  • While the tomatoes bake, heat the olive oil in a large pot over a high heat.

  • Fry the onions, carrots, celery, thyme and garlic until they start to brown.

  • Remove the tomatoes from the oven and add to them to the pot, along with the rest of the ingredients.

  • Lower the heat and allow to simmer for ten minutes.

  • Season with salt and pepper to taste.


  • Allow the sauce to cool to room temperature then store in an airtight container.

  • Refrigerate for up to four days or freeze for up to two months.

TIP: Divide the sauce into 250ml (1 cup) portions and store in freezer bags, labelled with the date, to use as needed. 

Allergens: This recipe contains sulphites.

Substitutions: If you prefer not to cook with alcohol or you’re allergic to sulphites, omit the red wine from the recipe or substitute with beef stock to add a rich, hearty flavour.
