Peanut Butter Oats with Crispy Bacon

A #JustDelicious combination of creamy, salty, sweet and nutty, this flavourful breakfast is truly oat of the ordinary!

Ingredients:

 

200 g

Eskort Diced Bacon

750 ml (3 C)

rolled oats

1 L (4 C)

water

250 ml (1 C)

full cream milk

45 ml (3 T)

butter

65 ml (¼ C)

peanut butter

10 ml (2 t)

salt

125 ml (½ C)

desiccated coconut

45 ml (3 T)

mixed seeds

65 ml (¼ C)

gooseberry jam

125 ml (½ C)

freash cream

 

fresh gooseberries, for garnishing

Method:

Peanut Butter Oats

  • Bring a pot of water to the boil and add salt.

  • Whisk in the oats, then lower the temperature and allow to cook for five to eight minutes.

  • Remove the oats from the heat, then add milk, butter and peanut butter, and mix well until combined.

Crispy Bacon

  • Preheat a frying pan over a moderate heat.

  • Add the bacon and cook until golden and crispy.

  • Remove from the heat and set aside.

Toasted Coconut and Seed Mix

  • In a dry frying pan over a medium heat, toast the coconut and mixed seeds.

  • Stir continuously to ensure even browning and prevent burning.

  • Once the coconut and seeds are fragrant and a shade or two darker, remove from the heat and add to a small bowl.

Assembly and Serving:

  • Dish a portion of peanut butter oats into a bowl, pour some cream over it and top with crispy bacon, toasted coconut and seed mix, and a spoonful of gooseberry jam.
