Ham, Cheese Berry and Cherry Tomato Toasties

Thick slices of freshly baked oat, seed and nut bread, spread with creamy butter, then topped with a scrumptious tomato and cherry jam, followed by grated parmesan and cheddar cheeses and #JustDelicious slices of smokey ham.

Ingredients:

 

Low GI bread

makes two loaves

500 g

oats

500 g

white bread flour

5 ml

salt

20 ml

baking powder

250 g

butter

500 ml

buttermilk

375 g

soft soaked dates

4

eggs

75 g

macadamia nuts

75 g

pecan nuts

60 g

sunflower seeds

60 g

poppy seeds

Method:

  • Preheat the oven to 180°C.

  • Line two bread tins with baking paper and spray with spray n cook.

  • Place the oats into a food processor and pulse until fine.

  • In a large mixing bowl combine all the dry ingredients.

  • Add the nuts and seeds to the flour mixture.

  • Add butter, buttermilk and dates to a small saucepan and melt the butter and leave to cool.

  • Add the eggs to the butter mixture and mix well.

  • Add the butter mixture to the dry ingredients and mix well.

  • Fill each bread pan halfway with the dough.

  • Bake for 45 - 60 minutes.

75 g

seasonal fresh berries

180 g

cherry tomatoes

 

salt and pepper

125 ml

white cheddar cheese, grated

125 ml

Parmesan cheese, grated

45 ml

butter

30 ml

olive oil

Method:

  • In a small saucepan over medium heat, fry the cherry tomatoes in olive oil until the skins burst. Season with salt and pepper.

  • Add the berries and simmer for three minutes until a jam forms and remove from heat.

  • Slice 8 slices of Lo GI seed loaf. Top one slice of bread with the tomato and berry jam.

  • Add two slices of ham and the cheeses, place under the grill until the cheese melts.

  • Sandwich together with the remaining bread slice.
