A quick, fun meal for the whole family. Let the little ones help to assemble their own pizza’s to ensure the story about yesterday’s dinner stays magical.

Tramezzini Pizza Base:


3 loaves

tramezzini bread

120 ml

sun-dried tomato pesto

125 ml

tomato puree;

100 g

tomato paste

20 ml

fresh chives

Caramelised onions



red onions

250 ml

vegetable stock

50 g


60 ml

brown sugar

150 ml




350 g

Eskort Mini Frikkadels

250 g

mozzarella cheese




olive oil


salt and pepper


  • Preheat the oven to 180֯C.

  • Add the frikkadels into an oven proof dish and drizzle with olive oil, bake in the oven for 15 minutes or until the frikkadels are golden.

  • Slice each tramezzini in half and layer them on a baking tray lined with parchment paper.

  • Mix the tomato puree, sun-dried tomato pesto and fresh chives and generously spread on each of the tramezzini bases.

  • Slice the onions in half and place them faced down in a frying pan with vegetable stock, brown sugar and butter. Add water to the pan so that the onions are covered, then close the pan with parchment paper to steam/cook. Cook the onions until the water has evaporated and the onions caramelised.

  • Slice mozzarella in thick slices and layer each pizza base with the mozzarella cheese, frikkadels, and caramelised onions and bake in oven until cheese melts and turns golden

  • Serve with fresh rocket, olive oil salt and pepper.
