Starting your weekend with the family’s favorite “vleisies” – serving Eskort Streaky Bacon with a magical fry up.
Recipe Time: 25 minutes
Serves: 4 - 6

5 ml | freshly chopped thyme |
4 | extra large eggs |
Bacon |
|
200 g | Eskort Rindless Streaky Bacon |
60 ml | maple syrup |
20 ml | BBQ spice |
Topping |
|
80 ml | mozzarella cheese |
80 ml | white cheddar cheese |
Mushrooms |
|
250 g | portobellini mushrooms |
60 ml | basil pesto |
125 ml | fresh cream |
To serve |
|
| crusty bread (sourdough bread/ciabatta loaf) |
| salt & pepper to taste |
| olive oil |
Home made baked beans |
|
410 g | butter beans |
375 ml | tomato-based sauce (Napolitana) |
| zest of 1 lemon |
10 ml | cumin spice |
Method:
Preheat your oven to 180ºC.
Bacon:
On a parchment-lined baking sheet, arrange bacon in a single layer and drizzle with maple syrup and sprinkle with BBQ spice. Bake until fat is rendered and bacon is beginning to brown (15 to 18 minutes).
Homemade Baked Beans:
While the bacon is in the oven add 10ml olive oil to a pan and fry the thyme and cumin spice for 1-2 minutes, add the butterbeans, lemon zest, tomato-based sauce and salt and pepper to taste. Simmer for another 5 - 8 minutes. Remove from the heat and break eggs on top of the beans.
Cover with mozzarella and white cheddar and bake in the oven for 12 minutes or until the eggs are cooked to your preference.
Creamy Basil Pesto Mushrooms:
In a pan, fry mushrooms on high heat in some olive oil until golden brown, add the basil pesto and cream, reduce the heat down to moderate and simmer until cream has thickened.
To serve:
Top your “Shakshuka” with the maple bacon and serve with the creamy pesto mushrooms and crusty bread.
