French Toast Crumpets with Bacon & Chilli

This #JustDelicious breakfast is equally popular as a snack or lunchtime treat, if you don’t feel like making crumpets from scratch, buy some store bought ones to cut down on your time in the kitchen.

Serves: 4-6



200 g

Eskort Rindless Back Bacon

250 ml

cake flour

10 ml

baking powder



30 ml

white sugar


eggs, beaten

200 ml


15 ml

butter, melted


eggs, beaten, for dipping crumpets

50 ml





ground black pepper


butter for frying crumpets


maple syrup


small red chilli, finely chopped;


  • Fry bacon in a little oil until cooked to your liking, remove from pan and set aside, keep warm.

  • Sieve the flour, baking powder, salt and white sugar together in a mixing bowl.

  • Beat the egg, milk and melted butter together then add to dry ingredients and mix well until lump-free and well mixed.

  • Spray a frying pan with Spray ’n Cook or heat 15 ml of oil in a frying pan. Pour about 45 ml of batter into the hot oil in the middle of the pan. When the batter starts to bubble, turn over, using a egg lifter.

  • Fry for 1 minute more on the other side until crumpets are slightly browned and cooked through.

  • Remove from pan and stack on a plate. Repeat until batter is finished.

  • In the same pan, melt some butter over medium heat.

  • Beat together the 2 eggs and cream and season with salt and pepper.

  • Soak each crumpet in the beaten egg, then fry in the butter, turning once until egg has set and crumpets have browned, remove from heat and set aside.

  • Repeat until crumpets are all fried.

  • Assemble crumpets alternating between a crumpet and some bacon and top with a drizzle of maple syrup and sprinkling of chilli.
