This #JustDelicious cheesy toasty breakfast will go down an absolute treat with the whole family.

200 g

Eskort Rindless Back Bacon

20 g


4 slices

bread of your choice



60 g

Parmesan, grated




ground black pepper


chives, to garnish


  • Heat butter in a frying pan and fry bacon on both sides until cooked through.

  • Remove bacon from pan and allow to cool, then cut into pieces

  • Transfer the bacon fat and butter into a small bowl.

  • Using a cookie cutter (or a mug or cup), cut out the centre of each slice of bread.

  • Butter each slice of bread, on both sides, with the bacon butter from the pan.

  • Reheat pan and place a slice of bread in the middle of the pan, fry until browned, then flip.

  • Crack an egg into the middle and season with salt and pepper and a sprinkling of Parmesan cheese.

  • Cover the pan and allow egg to cook through.

  • Remove from pan and set aside, keep warm.

  • Repeat with remaining slices of bread.

  • To serve, place a slice of bread on a plate and top with a sprinkling of the bacon and a little Parmesan and some fresh chopped chives.
