These #JustDelicious breakfast tacos are super quick and easy and super satisfying!

4 | Eskort Russians, sliced |
30 ml | olive oil |
1 | onion, chopped |
2 cloves | garlic, finely chopped |
4 | eggs, fried |
| salt |
| ground black pepper |
4 | tortillas |
2 | spring onions, sliced |
50 g | feta cheese, crumbled |
| lemon wedges for serving |
Method:
Heat oil in a frying pan and cook Russians until browned, remove from pan and set aside.
Add onion and garlic and cook until softened, add Russians, toss to combine and fry until browned, remove from heat and set aside.
Heat tortillas according to package instructions.
Fry your eggs and heat your tortillas through.
Assemble tacos with a layer of the onion and Russians mixture and top with spring onions, feta cheese and a fried egg.
Serve warm with lemon wedges.
