Curried Sausages & Pap

375 g

Eskort Chicken Sausages, sliced

10 ml

olive oil


large onion, finely diced

2 cloves

garlic, finely chopped

15 ml

curry powder

5 ml

ginger powder


carrots, peeled and sliced


potatoes, peeled and cut into cubes

30 ml

tomato paste

1 can

chopped tomatoes

250 ml

chicken stock

200 g

frozen peas




ground black pepper


Maizena (optional)


fresh coriander, to garnish

500 g

maize meal, cooked according to package instructions


  • Heat oil in a pot and add onions and garlic, fry until softened.

  • Add curry powder and ginger powder and fry for 1 minute, stirring until combined.

  • Add chicken sausages and fry for another 5 minutes.

  • Add carrots and potatoes and fry for another 2 - 3 minutes, stirring to combine.

  • Add tomato paste, tinned tomatoes and chicken stock and stir well to combine.

  • Allow to simmer for 25 – 30 minutes, uncovered so that the sauce thickens.

  • Add peas and season with salt and pepper and simmer for another 5 minutes until peas are just cooked through.

  • If you’re sauce hasn’t thickened enough for your liking, add 10 ml of cornflour (Maizena) to 30 ml of water, and add to your curry.

  • Cook for another 5 minutes until sauce has thickened and cornflour has cooked off.

  • Serve warm with pap, or if you prefer rice or mashed potatoes, garnished with fresh coriander.
