Eskort Gold Medal Pork Sausages

15 ml

olive oil


onion, chopped

200 g

baby tomatoes, whole


red pepper, de-seeded and cut into pieces


yellow pepper, de-seeded and cut into pieces


green pepper, de-seeded and cut into pieces


celery sticks, sliced

2 cloves

garlic, finely chopped

5 ml

dried thyme

5 ml

dried origanum

5 ml


15 ml

red wine vinegar

15 ml


500 ml

chicken stock

1 can

chopped tomatoes


salt and freshly ground black pepper


flat-leaf parsley, chopped, to garnish


  • Heat the oil in a frying pan, add the sausages and cook until browned all over.

  • Remove the sausages from the pan and set to one side.

  • Add the onion, tomatoes, peppers and celery to the pan and fry for until softened.

  • Add the garlic, thyme, origanum and paprika and fry for another 2 - 3 minutes.

  • Add the vinegar and flour and cook, stirring, for 1 - 2 minutes.

  • Return the sausages to the pan.

  • Stir in the chicken stock, chopped tomatoes and season with salt and pepper.

  • Bring to a simmer and cook for 15 minutes until the sauce has reduced and thickened.

  • Serve warm with a sprinkling of parsley and some crusty bread to soak up all the gravy.
