JalapeÃo Popper Hot Dog Bites

Serves: 4

Ingredients:

 

380 g

Eskort American Hot Dogs Gourmet Regular

6 rashers

Eskort Rindless Streaky Bacon, chopped into pieces

15 ml

olive oil

1 roll

puff pastry

230 g

cream cheese, softened

5 ml

garlic powder

200 g

cheddar cheese

 

salt

 

ground black pepper

jalapeños, ends and seeds removed and halved lengthwise

1

egg, beaten

Method:

  • Preheat oven to 180°C and spray a large baking tray with Spray n Cook.

  • Heat olive oil in a frying pan and fry bacon until crispy, remove from heat, drain and set aside.

  • In a bowl combine cream cheese, garlic powder, bacon, and cheddar.

  • Season with salt and pepper and stir until all ingredients are well combined.

  • Using a knife, spread the cream cheese mixture onto the puff pastry.

  • Slice puff pastry lengthwise into strips.

  • Slice American Hot Dogs to suit length of jalapeños then place hot dog pieces into the jalapeño halves.

  • Place each hot dog filled jalapeño onto a strip of puff pastry and roll up so that jalapeño and hot dogs are ensconced in the puff pastry.

  • Brush each with egg wash and place on baking tray.

  • Bake for 20 - 25 minutes until golden brown.

  • Remove from oven and serve warm.
