Bacon and Baby Marrow Salad

YOU & Drum Food assistant Carmen Petersen turned her niece into a baby marrow fan with this delicious salad served with grilled honey bacon. Make this for a family lunch. Everyone will love it!

Serves 4

Ingredients:

 

Dressing

 

2.5 ml

prepared mustard

45 ml

olive oil

 

juice of 1 orange and 1/2 a lemon

 

honey

45 ml

poppy seeds

Salad

 

6-8

baby marrows, shaved using a potato peeler

200 g

rainbow baby carrots, halved

 

oil

125 g

Eskort Rindless Streaky Bacon

 

honey

 

Parmesan shavings

handful

fresh leafy herbs including basil and mint

Method:

Dressing

  • Mix together all the ingredients in a glass jar with a tight-fitting lid.

  • Close and shake until mixed. Keep aside.

Salad

  • Brush the baby marrows and carrots with oil and grill in a smoking hot griddle pan till slightly charred.

  • Place the bacon in a single layer on a baking sheet, brush with honey and grill till crisp.

  • Arrange the marrows, carrots and bacon in a serving dish, spoon over some dressing and top with Parmesan shavings and the herbs. Serve warm.
