Portuguese Style Espetada

We’re mixing it up with a little Portuguese flare and a #JustDelicious spin on the traditional Espetada!

Cook Time: 1hr (includes marinating time)
Serves: 4



2 kg

Eskort Smoked Pork Fillet, cut into 2cm pieces

1 whole head

garlic, roasted

300 ml

dry Sherry

125 ml

olive oil


bay leaves




ground black pepper

100 g

butter, softened


  • Preheat oven to 200°C.

  • Place garlic on an oven tray and drizzle with a little olive oil.

  • Place garlic in oven and roast for 30 minutes or until cloves are soft and squishy.

  • Remove garlic from oven and squeeze garlic cloves out of the skins into a bowl, mash together to form a paste.

  • Place garlic, salt, pepper, sherry, olive oil and bay leaves in a bowl and whisk together.

  • Place pork fillet pieces into a large bowl, pour over the garlic marinade and toss to coat all pieces well.

  • Cover with clingwrap and refrigerate, allow to marinade for 30 minutes.

  • Remove pork from fridge when ready to cook and thread pieces onto steel or wooden skewers, if you’re using wooden skewers, soak them in some water for 20 minutes so they don’t burn.

  • Keep the marinade for basting.

  • Fire up your braai and when ready, braai pork espetada, basting with the marinade every now and then, until cooked.

  • Remove from braai and drizzle with melted butter and season with salt to taste, keep warm.

  • Serve warm with a salad or side of your choice.
