Bacon & Egg Breakfast Ring

Serves: 4-6



200 g

Eskort Rindless Streaky Bacon


large eggs (1 for egg wash)

1 roll

puff pastry, thawed

15 ml



onion, finely chopped


red pepper, chopped


green pepper, chopped

5 ml

Italian herbs




ground black pepper

250 g

cheddar cheese, grated


  • Preheat oven to 200°C and line an oven tray with baking paper.

  • Beat the eggs lightly in a bowl, add Italian herbs and season with salt and pepper, set aside.

  • Heat butter in a frying pan and add the onion, green and red pepper, fry until just softened.

  • Add the beaten eggs to the pan and scramble them with the onions and pepper.

  • Remove from heat and set aside.

  • In a separate pan, fry the bacon until just cooked, remove from heat and set aside.

  • Lay puff pastry out and roll out lightly until you roughly have a square shape (don’t make it too thin!), move pastry to oven tray.

  • Using a cookie cutter (or cup/glass/knife) cut a circle out of the middle of the pastry.

  • Using a knife, cut 8 ‘fingers’ (as if you were shaping a star) - you want 8 points sticking out around the circle.

  • On each star point, lay a piece of streaky bacon.

  • Add half the cheddar cheese around the middle of the ring, then the scrambled egg mixture and then the remaining cheese.

  • Now fold each star point with bacon over the egg and cheese mixture and secure it in the middle of the ring by pinching pastry together.

  • Brush pastry with a lightly beaten egg (you want golden pastry) and bake in oven for about 20 - 25 minutes until golden brown.

  • Remove from oven, slice and serve warm!
