Sausage Frittata with Avo Chilli Salsa

Sassy Salsa with Sausage Frittata - perfect way to impress your sweetheart!

Eskort Cheese Russians

15 ml

olive oil


large onion, sliced into half moons

1 clove

garlic crushed


medium potatoes, peeled and chopped into pieces


eggs, beaten

125 ml



salt and ground black pepper


avocado, peeled, chopped


large tomatoes, chopped


small red chilli, finely chopped

15 ml

lemon juice

small handful

fresh coriander, roughly chopped


  • Preheat oven to 200°C.

  • Heat oil in a large frying pan, add onion and garlic and fry over medium heat until just softened.

  • Remove from pan and set aside.

  • Add Russians to same pan and fry until just cooked, remove from pan and set aside. Slice into coins when cool.

  • Add potatoes to the same pan and fry until just softened, remove from heat and set aside.

  • Add onion mixture and Russians to potatoes in the pan and mix.

  • Whisk eggs and cream together and season with salt and pepper.

  • Pour egg mixture over the potato and Russians mixture, covering evenly.

  • Use a spoon to press potatoes, Russians and onion mixture into the egg mixture.

  • Place frying pan over low-medium heat and allow egg mixture to start cooking until almost set (8 - 10 minutes).

  • Once set remove pan from stove and place in oven to complete cooking until top is golden brown and egg mixture is set (about 5-8 minutes).

  • Meanwhile, make the salsa by combining avocado, tomato, chilli, lemon juice and coriander in a small bowl.

  • Season with salt and pepper.

  • Turn frittata out onto a clean work surface. Cut into wedges and serve with avocado salsa.
