Honey Dijon Pork & Minty Mixed Peas

Serves: 6-8




Eskort Pork Fillets

45 ml

whole grain Dijon mustard

45 ml


8 sprigs

fresh thyme leaves, leaves picked

15 ml

olive oil


onion, sliced


salt & pepper, to taste

500 g

frozen peas

100 g

snap peas

small bunch

fresh mint, roughly chopped

30 g


100 ml

chicken stock


salt & pepper


  • Preheat oven to 200⁰C.

  • Mix together mustard, honey, thyme and olive oil in a small bowl.

  • Place sliced onion in a single layer in the bottom of a casserole dish.

  • Season pork with salt and pepper on all sides, and then place on top of onion in the dish.

  • Brush half of the mustard mixture over the pork.

  • Cover with foil, place in oven and cook for 25 minutes.

  • Remove foil, brush with remaining mustard sauce, and place back in the oven, cook for a further 10 minutes until top is crispy and brown.

  • Remove from oven and allow pork to rest for about 10 minutes before slicing and serving.

  • Sauté leeks in the butter in a frying pan until soft.

  • Add peas (both kinds) and chicken stock and simmer peas are tender yet still bright green.

  • Remove from heat and season with salt and pepper.

  • Add mint and toss to combine all ingredients just before serving.

  • Serve pork fillet sliced with a drizzle of the leftover marinade juices and the peas.
