Butternut & Pork Stir Fry

375 g

Eskort Gold Medal Pork Sausages

500 g

butternut, peeled and cut into pieces

30 ml

olive oil

2 cloves

garlic, finely sliced


red chilli, finely sliced

2 cm

fresh ginger, peeled and finely sliced


spring onions, finely sliced


lemon, juiced

30 ml

fish sauce

5 ml

brown sugar




ground black pepper


roasted peanuts, roughly chopped

small handful

fresh coriander, roughly chopped


small red chilli, sliced


  • Boil butternut in salted water until just starting to soften, drain and set aside.

  • In a large frying pan, heat 15ml of olive oil and fry sausages until golden brown, remove from heat and set aside.

  • Add butternut pieces to the same pan with the drippings from sausages and on high heat, fry butternut until starting to brown, season with salt and pepper, remove from pan and set aside.

  • Slice sausages into 1 cm coins.

  • Heat remaining olive oil in the same pan and add garlic, chilli, ginger and spring onions and fry for a minute or two until softened. Add lemon juice, fish sauce and brown sugar and cook for another 1 - 2 minutes until aromatic.

  • Add sausages and butternut back to the pan and toss to combine with the sauce, fry for a further 2 minutes.

  • Serve stir fry warm with chopped peanuts, fresh coriander and sliced chilli.
