Ginger Pork Noodle Soup

375 g

Eskort Gold Medal Pork Sausages


onion, quartered and peeled apart

2.5 ml

chilli flakes

2 cloves

garlic, crushed


cinnamon stick


star anise

2 cm

ginger, peeled, crushed

2 L

good quality chicken stock

30 ml

sesame oil




ground black pepper

250 g

rice noodles


bean sprouts


fresh coriander, to garnish


spring onions, thinly sliced, to garnish


roasted peanuts, chopped, to garnish


limes, cut into wedges, to garnish


red chilli, chopped, to garnish


  • Heat some sesame oil in a pot, add onion and fry for 2 - 3 minutes until just softened.

  • Add chilli flakes, garlic, cinnamon stick and star anise and fry off for another minute, just until fragrances start developing.

  • Add ginger and chicken stock and bring to a boil, reduce heat and allow to simmer for 20 minutes.

  • In a pan fry pork sausages in remainder of the sesame oil until brown and cooked through.

  • Remove from heat and set aside to cool slightly.

  • Add noodles to your chicken stock broth and cook for 1 - 2 minutes until just cooked through.

  • Slice pork sausages into coins.

  • Remove star anise and cinnamon stick from broth and divide broth and noodles among 4 bowls.

  • Add pork sausages, top with bean sprouts, coriander, spring onions, and peanuts and serve with lime wedges and some fresh chilli.
