500 g

Eskort Smoked Viennas, cut into rounds

30 ml


15 ml

soy sauce

15 ml

fish sauce

2,5 cm

fresh ginger, peeled and sliced


red chilli, de-seeded and sliced

5 ml

sesame oil

250 g

brown rice

50 g

cashew nuts


cucumber, sliced


small red cabbage, shredded


avocado, sliced


fresh coriander, to garnish


fresh mint, to garnish


  • Mix together the honey, soy sauce, fish sauce, ginger and chilli in a bowl, add the rounds of smoked Viennas and toss well to combine.

  • Heat sesame oil in a frying pan and fry off the smoked Viennas, once browned, set aside to cool.

  • Cook brown rice according to package instructions, remove from heat and allow to cool slightly.

  • Plate your salads by starting with a small mound of rice, next to that a helping of the fried Viennas, a little pile each of the cabbage, cucumber slices, cashew nuts and a few slices of avocado.

  • Garnish with some fresh coriander and mint leaves.
