Chicken Braai Burgers & Beetroot Feta Salad

Serves: 4

Ingredients:

 

500 g

Eskort Chicken Braai Burgers

6-8

medium beetroots, peeled and cut into quarters

60 g

feta cheese, roughly broken

30 ml

parsley, roughly chopped

45 ml

lemon juice

45 ml

olive oil

2 cloves

garlic, minced

 

ground black pepper, to taste

 

salt to taste

Method:

  • Boil the beetroot on medium heat for 45 mins or until it can be easily pierced through with a knife.

  • The skin will easily peel off. After removing the skin of the beetroots, cut the beetroot into quarters and add to salad bowl.

  • Roughly break up the feta and sprinkle over beetroot.

  • Roughly chop the parsley.

  • Make a dressing by combining the lemon juice, olive oil and garlic together in a bowl, whisk to combine.

  • Mix beetroot, feta cheese and parsley with the dressing and set aside.

  • Braai chicken braai burgers according to package instructions and serve with the beetroot and feta salad.
