Bacon Stuffed Cheesy French Toast

A #JustDelicious cheesy bacon breakfast treat!

200 g

Eskort Rindless Back Bacon

8 slices

brown bread (it’s better to use day old bread than fresh bread)

250 g

mozzarella cheese (or cheese of your choice), grated



90 ml


60 g

Parmesan cheese, grated


salt and pepper, to season

30 g

butter, for frying


maple syrup, for serving


  • Heat the butter in a pan, fry the bacon until cooked through, remove bacon from pan and set aside (keep the bacon fat for frying the French toast).

  • Layer 4 slices of bread with the bacon and mozzarella cheese, top with the other 4 slices of bread to make a sandwich.

  • Press edges down tightly and set aside.

  • In a shallow bowl big enough to hold the bread slices, whisk the egg, milk, Parmesan cheese, and a pinch of salt and pepper until well-combined.

  • Working carefully to not break up your sandwich, soak each sandwich in the egg mixture until both sides are well-coated.

  • Heat up the pan with the reserved bacon fat, add a little of the butter and one by one add the soaked sandwiches and fry until golden-brown on both sides, about 2 minutes per side.

  • Serve immediately with plenty of maple syrup.
