Slow Roasted Pork Belly & Smashed Roast Potatoes

Spicy, sweet and crunchy, DJ Suga dishes up the secrets on her #JustDelicious pork belly recipe.

1 Eskort Pork Belly, scored (to prepare, I salted the skin with coarse sea salt)

I prepared a marinade


3 cloves

garlic, minced


zest and juice of lemon


zest and juice of lime

30 ml

light soy sauce


chopped Peppadew

10 ml

dry chilli flakes

sesame seeds, toasted


fresh coriander


  • Combine garlic cloves, lemon juice and zest, lime juice and zest, soy sauce, Peppadew and chilli flakes in a bowl and mix.

  • Pour marinade onto an oven baking tray and place pork belly, skin side up, on top of the marinade.

  • Sprinkle pork belly skin with coarse salt and rub in to cover completely.

  • Cover pork belly and place in the refrigerator. (I leave my pork belly to marinate overnight. I liked the idea of using lemon juice as I cook with lemon a lot).

  • To prepare pork belly in oven, preheat oven to max.

  • Place pork belly skin side up into the oven and cook on high heat for 20 minutes

  • Thereafter bring oven temperature down to 150°C and cook for 2 and a half to 3 and a half hours until meat is super tender and the crackling is perfect!

  • Smashed Potatoes - Nothing screams comfort food quite like potatoes of course you could substitute with sweet potatoes if you like.

  • Boil potatoes for 20 minutes, drain and place on baking tray, squashing down gently (I use my fist once the spuds have cooled otherwise a trusty ramekin does the job nicely).

  • Preheat oven to 200°C and place potatoes on baking tray.

  • Sprinkle with freshly minced garlic (not too much).

  • Roast for 20 minutes or until golden brown.

  • Serve with toasted sesame seeds and fresh chopped coriander.
