DJ Mack serves up some #JustDelicious Asian inspired steamed buns.

1 packet

Eskort Smoked Russians

2 cloves

garlic, minced

soya sauce

30 ml

demi glaze


onion, finely chopped

10 ml



salt and pepper to taste

Bread Dough


250 g

cake flour

5 ml


2.5 ml

150 ml

warm water


  • Heat pan with oil, then sauté the onions and garlic until translucent and aroma is released.

  • Add Russians and fry for 10 min, add soya and demi glaze allow to reduce until glossy and thick.

  • Add herbs and season remove from heat and set aside to cool completely.

  • Dissolve the yeast and sugar in 25 ml warm water, allow to ferment for 5 min.

  • Sift flour and salt, add yeast mixture and mix until will incorporated with the flour.

  • Add water little at a time until dough forms.

  • Knead on a floured surface until smooth and dough springs back.

  • Prove until double in size. Remove and knock back down.

  • Divide dough into ball, poke a hole at the bottom and fill with Russian mixture.

  • Line on greased muffin cases and allow dough to raise a second time.

  • Heat a pot with boiling water place steamer on top and place each bun, cover with a lid and allow to steam for 35 min.

  • To serve, glaze buns with butter and finish off with a balsamic reduction.
