Quick Russian Curry Bunny Chow

After all the compliments I got from my husband this has become my go to recipe when we feel like curry in the middle of the week, but only have 30 minutes to make it.

Serves: 4



500 g

Eskort Russians, sliced into 1cm rings

15 ml

sun ower oil


onions, chopped

1 clove

garlic, crushed

30 ml

ground curry powder

410 g tin

Indian style tomatoes

250 ml

chicken stock

150 g

green beans, cut into 2cm lengths


salt and ground black pepper


coriander, chopped + extra


unsliced white bread loaf


  • Heat the oil on high and sauté the onions and garlic for about 5 minutes until browned.

  • Stir in the curry powder and then the tomatoes.

  • Add the stock, russians and green beans and simmer for 5 minutes.

  • Season with salt and ground black pepper. Mix in the coriander.

  • Cut the loaf into 4 pieces and hollow each out, leaving a 2cm layer.

  • Spoon the curry into the breads and garnish with extra coriander.

  • Serve immediately.
