Spicy Pork Cottage Pie
Spicy Pork Cottage Pie

Cottage pie has never been so good, so easy, #JustDelicious and so inviting.

Serves: 6

Ingredients:

 

1 kg

Eskort Gold Medal Pork Sausages

30 ml

olive oil

1

large onion, finely chopped

4 cloves

garlic, crushed

5 ml

smoked paprika

5 ml

chilli flakes

60 g

tomato paste

410 g can

chopped tomatoes

300 ml

chicken stock

10 ml

dried origanum

5 ml

sugar

10 ml

Worcestershire sauce

 

salt & ground black pepper, to season

potatoes, peeled and cut into chunks

50 g

butter

60 ml

milk

1

large egg, beaten

50 g

cheddar cheese

Method:

  • Preheat the oven to 180°C.

  • Remove pork meat from sausage casings and set aside in a bowl.

  • Heat the oil in a large pot over medium-high heat, add the onion and sauté until soft.

  • Add the garlic and cook for another minute, then add the paprika and chilli flakes and mix well.

  • Add tomato paste and pork meat to the pan, cook for 2 or 3 minutes, stirring often, and allow to brown slightly.

  • Add the tomatoes, stock, milk, origanum, sugar and Worcestershire sauce to the pan, mix well and bring to the boil.

  • Reduce to a simmer, season with salt and pepper and cover. Leave to cook for 30 minutes.

  • Bring the potatoes to a boil in a pot of salted water, reduce to a simmer and cook until tender.

  • Drain and mash with the butter and milk and season with salt and pepper.

  • Spoon the mince mixture into a pie dish and top with the potato, brush with the beaten egg and sprinkle with cheese.

  • Bake for 45 minutes or until browned.

  • Serve with veggies of your choice.
