leeks, sliced

corn kernels, drained

cheddar cheese, grated

  • Preheat oven to 180°C and spray a 20 cm pie dish with spray and cook.

  • To make dough, place flour, butter and salt in food processor and blend until it resembles fine breadcrumbs.

  • Add just enough water to the food processor to form a dough.

  • Remove dough and place in a bowl, cover with plastic wrap and let rest in the refrigerator for about 30 minutes.

  • Roll dough out on a lightly floured surface and line pie dish with dough.

  • To make the filling, melt half the butter in a pan and fry bacon until crispy, remove and drain on paper toweling.

  • Melt remaining butter in same pan and fry the leeks until tender.

  • Mix leeks, bacon and corn kernels together. Sprinkle half of cheese over the dough lining the pie dish.

  • Spoon leek filling on top and sprinkle with remaining cheese. Beat eggs, cream and milk together, season with salt and pepper and pour over filling.

  • Bake for about 30 - 35 minutes until set.

  • Remove from oven and serve warm.
