Ham & Corn Chowder

250 g

Eskort Chopped Ham, diced

100 g

Eskort Diced Bacon

20 g



onion, finely diced

2 cloves

garlic, finely diced


carrots, finely diced

2 stalks

celery, diced

5 ml

dried thyme

65 g


500 ml

chicken stock

500 ml;


700 g

potatoes, peeled and cut into small cubes

1 x 410 g tin

corn kernels


salt and pepper to taste

15 g



spring onions, chopped


  • Heat the butter in a large pot over medium heat, add the onions, garlic, carrots and celery and cook until tender, about 8-10 minutes.

  • Mix in the thyme and flour and cook until the flour is lightly browned, about 2-3 minutes.

  • Slowly stir in the chicken stock, deglazing the pan as you go, add the milk and potatoes, bring to a boil, reduce the heat and simmer until the potatoes are tender, about 20 minutes.

  • Heat butter in a frying pan and fry the Eskort Chopped Ham in a pan until almost crispy, remove from pan and set aside.

  • In the same pan, fry Eskort Diced Bacon until crispy, remove from heat and set aside.

  • Add ham and corn kernels to chowder and cook for 2-3 minutes longer.

  • Season with salt and pepper.

  • Serve chowder warm, garnished with diced bacon and spring onions, with slices of ciabatta bread.
