200 g

Eskort Rindless Back Bacon, cut into pieces

2 rolls

puff pastry, defrosted

30 ml


300 g

baby spinach, roughly chopped


onion, sliced into rings


red pepper, sliced into strips


yellow pepper, sliced into strips

200 g

brown mushrooms, sliced

2-3 sprigs

fresh thyme


salt and black pepper to season

100 g

mozzarella cheese, grated

100 g

cheddar cheese, grated


egg, beaten


sandwich type grid with clamp


  • Light your braai and spray your sandwich grid with spray and cook.

  • Gently roll out 1 roll of puff pastry onto your greased grid.

  • Heat the butter in a pan and fry bacon until just cooked, remove and set aside. In the same pan, sauté onion, peppers, mushrooms and thyme together until softened, season lightly with salt and pepper and set aside.

  • Layer half of the mozzarella and cheddar on the pastry, top with the spinach, sprinkle with the bacon and top with the onion/pepper mixture (remove stalks of thyme), spreading everything evenly across the pastry (not all the way to the edges, you need room to seal the pastry).

  • Finish off with the rest of the cheese.

  • Roll out the second roll of pastry and place it on top of the first one with the filling, brush the edges of the bottom sheet of pastry with beaten egg and seal the edges (as if you were making a pie).

  • Brush the pastry with the beaten egg, coating completely on one side.

  • Seal the pastry in the grid by closing and clamping, turn grid over and brush the other side with the remaining beaten egg.

  • Place grid high up on a braai and cook until golden brown, turning constantly to make sure that the pastry doesn’t burn.

  • Remove from fire once pastry is cooked, open grid and remove.

  • Place braai pie on a board and cut into squares for serving. Serve warm.
