Sausage Lasagna Rolls

Eskort Gold Medal Pork Sausages

garlic, finely diced

dried oregano

30 ml

olive oil

fresh spinach, roughly chopped

250 g

plain cream cheese

250 g

mozzarella cheese, grated

60 g

Parmesan cheese, grated

500 ml

tomato pasta sauce


  • Preheat oven to 190°C.

  • In a pot of boiling salted water, cook the lasagne sheets for 5-8 minutes, until just soft enough to be pliable.

  • Remove lasagne sheets from water and lay flat on paper toweling to drain, pat top dry and set aside.

  • Remove pork sausage meat from casing and place in a bowl, mix the sausage meat with the garlic and oregano.

  • Heat olive oil in a frying pan over medium high heat, add sausage mixture and cook until no longer pink, remove from heat and allow to cool a little.

  • In a large bowl, mix together the sausage meat, spinach, cream cheese, half the mozzarella and parmesan.

  • Spray a casserole dish with spray n’ cook and spread 250 ml of the tomato sauce evenly over the bottom.

  • Spoon 30 ml of the sausage mixture onto the bottom of a lasagne sheet, spread evenly and roll the lasagne sheet up.

  • Place lasagne roll seam side down in the casserole dish. Repeat with remaining sheets of lasagne and filling.

  • Top the lasagne rolls with the remaining pasta sauce, spreading evenly over the top and sprinkle with remaining mozzarella cheese.

  • Bake uncovered for 20-25 minutes, until sauce is bubbly and cheese is golden.

  • Serve warm with a side salad.
