Sweet Tomato & Sausage Bake

Eskort Smoked Russians


baby potatoes, quartered, skin on

1.5 kg

cherry tomatoes, whole


onions, peeled and cut into wedges

10 ml

dried thyme

15 ml

dried oregano


bay leaf

3 cloves

garlic, finely diced


olive oil


balsamic vinegar


salt and ground black pepper

1 sprig

fresh rosemary leaves, to garnish


  • Preheat the oven to 190°C.

  • Put the russians, potatoes, cherry tomatoes, onions, herbs and garlic onto an oven tray (you can also use a casserole dish), drizzle generously with olive oil and season with salt and pepper, add a good drizzle of balsamic vinegar and toss all ingredients to make sure they’re all coated.

  • Place the tray in the oven and bake for 30 minutes.

  • Remove tray from oven and toss ingredients again, making sure sausages are turned over.

  • Put the tray back into the oven for another 15 minutes and cook until sausages and tomatoes are nice and sticky.

  • Once cooked, remove from the oven and if you feel your sauce is too runny, remove the sausages from the tray and place tray on stovetop and reduce sauce on a medium heat until it’s gooey and thick.

  • Put the sausages back in, toss to coat and serve with rice or a green salad.
