Smoky Egg & Bacon Salad

150 g

Eskort Diced Bacon


hard-boiled eggs, roughly chopped

200 ml

Greek yogurt

large pinch



lemon, juiced


salt and freshly ground black pepper to taste

2 sticks

celery, finely sliced


medium red onion, finely diced

small bunch

chives, chopped


  • Boil eggs for 8 minutes, remove from heat, peel, chop and set aside.

  • In a bowl, whisk together the Greek yogurt, paprika and lemon juice to make a dressing. Fry diced bacon on a high heat, until crispy, remove from heat and set aside to cool.

  • Gently toss the chopped hard-boiled eggs with the bacon, celery, red onion and chives.

  • Add the yogurt dressing, season with salt and pepper and toss until completely coated.

  • Refrigerate to chill and serve with crackers, melba toasts or in a sandwich.
