Sausage Alfredo Pasta Bake

Ingredients:

 

250 g

Eskort Smoked Viennas, sliced into 2 cm rounds

250 g

penne

30 ml

butter

250 ml

heavy cream

2 cloves

garlic, finely chopped

250 ml

Parmesan cheese, grated

 

salt to season

 

ground black pepper, to season

15 ml

butter

125 ml

red onion, chopped

125 ml

green pepper, chopped

150 g

white mushrooms, sliced

100 g

mozzarella cheese, grated

Method:

  • Pre-heat oven to 190°C and spray a casserole dish with spray and cook.

  • Cook pasta according to packet instructions.

  • Melt 30 ml butter in a small pot over medium heat, add the garlic and fry until just softened, add the heavy cream and simmer for 5 minutes, add the parmesan cheese and whisk until the parmesan cheese has melted.

  • Remove from the heat and set aside.

  • In a frying pan, 15 ml butter and fry the red onion and green pepper for 2-3 minutes. Add the mushrooms and continue to fry for an additional 2-3 minutes. 

  • In a large bowl combine the pasta, smoked viennas, fried mushroom mix and the sauce and mix well.

  • Spread evenly into the casserole dish and top with grated mozzarella cheese.

  • Bake for 20-30 minutes, or until the cheese is melted and the mixture is heated through. Serve immediately.
