Bacon & Cheese Dip
Bacon & Cheese Dip

Serves: 4



150 g

Eskort Diced Bacon

30 g


20 ml

all-purpose flour

250 ml

full cream milk

250 ml

cheddar cheese (or any other strong cheese of your choice)

4-5 drops


2 ml

cayenne pepper


salt & ground black pepper to taste

small bunch

fresh chives, chopped


  • On a low to medium heat melt the butter in a small saucepan, add the flour and stir constantly until flour is absorbed then slowly add your milk, stirring or whisking as you go.

  • Once all your milk has been added, add the cheese, Tabasco, cayenne pepper, salt and pepper.

  • Keep stirring until cheese has melted and you have a thickish smooth silky sauce (takes about 5 minutes, don’t let it start boiling).

  • Remove cheese sauce from heat and allow to cool slightly.

  • While your cheese sauce is cooling, fry your bacon in a frying pan until crispy.

  • Remove bacon from heat and allow to cool.

  • Add about ¾ of the bacon and the chives to the cheese sauce and mix until combined.

  • Serve in a bowl with a sprinkling of the remaining bacon on top.

  • Serve with bread straws, crisps or fries.
