Bacon, Feta, Harissa Tomato & Coriander Omelette
Bacon, Feta, Harissa Tomato & Coriander Omelette

Ingredients:

 

100 g

Eskort Diced Bacon

4

large eggs

20 ml

cream

 

salt and pepper to taste

50 g

baby tomatoes, halved

5 ml

harissa paste

10 ml

olive oil

20 g

butter

50 g

feta cheese, crumbled

30 ml

fresh coriander, chopped

Serves: 2

Method:

  • Beat the eggs and cream together in a bowl and season with salt and pepper.

  • Mix the tomatoes, harissa paste and olive oil together in a bowl and microwave on high for 2 minutes until soft, remove and set aside to cool.

  • Heat the butter in a frying pan and fry the bacon until crisp, remove from the pan and set aside.

  • In the same pan with the bacon drippings, pour in the egg mixture and cook on medium heat until the omelette has set.

  • Remove the frying pan from the heat and on one half of the omelette, spoon over the tomato harissa mixture, sprinkle the crispy diced bacon and crumbled feta over and top with the chopped fresh coriander.

  • Fold the other half of the omelette over the filled half, then cut in half and serve.
