Pulled Pork Tortilla Cake

Ingredients:

 

500 g

Eskort BBQ Marinated Pulled Pork

6

tortillas / wraps

2 cans/jars

tomato salsa or chopped tomatoes

1

red onion, sliced

1

red pepper, sliced

1

yellow pepper, sliced

1 can

red kidney beans

1 can

Cannellini beans

500 ml

mozzarella, grated

1

spring-form cake tin

250 ml

ready-made guacamole

150 g

sour cream

 

fresh coriander, for serving

Method:

  1. Preheat the oven to 180°C.

  2. Put one wrap at the base of the cake tin. Spread a layer of pulled pork, sliced onion, salsa/chopped tomatoes, peppers, beans and mozzarella. Repeat until the cake tin is full.

  3. Oven bake for 30 minutes.

  4. Remove from the cake tin.

  5. Serve by spreading guacamole on top of the “cake”. Dollop some fresh sour cream and sprinkle coriander to finish.
