Eskort Pork Fillet


eggs, beaten

625 ml

dried rosemary




spring onion, chopped to serve


  1. Preheat the oven to 180ºC.

  2. Blitz the cornflakes, rosemary and salt in a food processor to create the crumb.

  3. Chop the fillet into chunks. Dip each chunk into the flour, then the eggs, and finally the cornflake crumb.

  4. Lay the crumbed nuggets on a greased baking tray and bake for 20 minutes.

  5. Drizzle with some honey and sprinkle chopped spring onion on top to serve.
