Pork Bunny Chow

Ingredients:

 

500 g

Eskort fresh pork (fillet or pork neck steaks)

 

olive oil for frying

1

onion, chopped

15 ml

minced garlic

2

carrots, chopped

1 can

chopped tomatoes

1 packet

ready-made curry sauce

6 - 8

curry leaves

30 ml

white vinegar

2 - 3

potatoes, roasted

2

apples, chopped

1 loaf

bread for serving

Method:

  1. Fry the onions in some olive oil, then add the garlic.

  2. Cut the pork into strips and add to the pan.

  3. 
Add the carrots and stir together, then add the chopped tomatoes, curry sauce, curry leaves and vinegar.

  4. Simmer for a few minutes before adding the potatoes and chopped apples.

  5. 
Leave to simmer for about 15 minutes.

  6. 
Serve in half a loaf of bread that has been hollowed out.
