Ingredients:

Chicken Viennas

250 ml

maize meal or polenta

250 ml

gluten-free flour

2

eggs, beaten

5 ml

sugar or honey

250 ml

milk

5 ml

baking powder

Method:

Preheat the oven to 180°C.

Grease muffin pan.

Large bowl - add Corn meal, gluten-free flour mix, 2 eggs, sugar, baking powder and milk.

Cut Viennas into 3 portions each.

Add the Viennas to the centre of the muffins and bake for 15 - 20 minutes.

For a Banting/healthier option, try the following:

Replace the maize and gluten-free flours with 1/2 a cup of coconut flour.
Make sure you use honey instead of sugar.
