375 ml

mozzarella, shredded

190 ml

almond meal/flour

5 ml

xanthan gum

30 ml

cream cheese


eggs (one for dough, one for egg wash)

Spice Mix:


30 ml

sesame seeds

30 ml

black sesame seeds or poppy seeds

15 ml

coarse salt

15 ml



  1. Preheat oven to 180°. Line a baking pan with baking paper.

  2. Place mozzarella & cream cheese in a medium sized microwaveable bowl and microwave for about 1.5 minutes.

  3. Stir to combine everything. Make sure all the cheese is melted.

  4. In a separate bowl, add almond flour, 1 egg and xanthan gum. Mix until combined.

  5. Add the hot cheese to the almond mixture and work the to into each other. Using a rubber spatula works, or wetting your hands and kneading it in the bowl. Mix until you have a well-combined dough.

  6. Portion dough into 4 balls and gently roll each one out to about 50cm. Having wet hands will help from sticking to you!

  7. Wrap one piece of dough around each Vienna.

  8. Beat remaining egg in a small bowl to make your egg wash. Brush onto each dog.

  9. Mix all of the Everything Bagel Spices into a medium bowl and dip each dog into it, covering the dough completely.

  10. Place dogs on lined sheet pan and bake for about 20 minutes, or until golden brown.
