WINE CHOICES BY FOOD TYPE
Everybody’s tastes and preferences differ but here are some suggestions.

Cheese choices
Blue.
Desert wines and Port.
Cheddar.
Full-bodied Red or Ruby Port.
Cream. Full-bodied Red or Whites including Savignon Blanc and Chardonnay.
Camembert & Brie. Whites, especially Wooded Chardonnay and Full-Bodied Reds.
Goat. Spicy Shiraz/Merlot and Full-bodied Cabernet Savignon.
Gouda & Yellow Cheeses. Fruity White or Juicy Reds

Meat choices
Beef.
Red Blends, Cabernet Savignon. Served spicy, Pinotage and Shiraz.
Chicken.
White wine of choice or Pinot Noir. Also Reds at a braai or when prepared with pastry.
Mutton & Lamb. Red Blends, Merlot.
Pork. Red Blends, Carbernet Franc, Riesling, Rosé, Blanc de Noir, Semillon. Ribs, Pinotage.

Pasta choices
Creamy sauces.
Chardonnay, Pinot Noir, Rosé, Blanc de Noir, Sauvignon Blanc.
Tomato, Meat & Cheese Sauces. Full-bodied Red.

Salad choices
Colombar, Chardonnay/blends, Rosé, Blanc de Noir, Sauvignon Blanc.

Seafood choices
Grilled fish.
Bubbly, Sauvignon Blanc or Chardonnay/blend when served with cream sauce.
Baked fish. As above and Pinot Noir when served with a red wine sauce.
Shellfish. Light Sauces - Saivignon Blanc, Chenin Blanc or Riesling. Rich Sauces - Chardonnay or Bubbly. Also Chenin Blanc.

Festive choices
To start. A bottle of bubbly (or two) will complement many starters and add that festive cheer. If you like it dry, serve Brut Rosé and add a maraschino cherry to each glass.
Gammon. More bubbly? Off-dry white, fruity reds, Rosé, Zinfandel. Chenin Blanc works well if served with apple sauce.
Turkey. Zinfandel, dry Rosé, Pinot Noir, full-bodied Shiraz or Chardonnay.

SERVING WINES
 
Red wines (including port) are often served at room temperature but should be served at 16° C - 18° C. All other wines should be chilled to 8° C - 10° C.
 
Ideal serving temperatures are as follows:
 
Sweet Sparkling Wine  5° C - 8° C
Dry Sparkling Wine  8° C - 10° C
Unwooded White, Sweet White and Rosé  8° C - 14° C
Wooded White 13° C - 16° C
Light Red and Nouveau Wines 10° C - 14° C
Full-Bodied Red 16° C - 18° C
Dessert Wine and White Port  8° C - 10° C
Red Port 16° C - 18° C
