Coffee Glazed Gammon with Beetroot

With its crisp, caramelised crackling and bold baked beetroot accompaniment, this star anise and coffee glazed gammon is a brewtiful centrepiece for your family feast table!

Glazed Gammon


1.5 kg

Eskort Gammon

1 L (4 cups)

filter coffee

6 cloves

star anise

250 ml (1 C)

treacle sugar


onions, quartered

3 cloves

garlic, crushed


red chilli, chopped

Baked Beetroot


1 kg

beetroot, quartered

65 ml (¼ C)

olive oil

65 ml (¼ C)

butter, cut into blocks

45 ml (3 T)

black pepper

45 ml (3 T)

fresh rosemary, chopped

5 ml (1 t)

ground sea salt

250 ml (1 C)

Greek yogurt


fresh mint


Star Anise and Coffee Glazed Gammon

  • Preheat oven to 200°C.

  • Place the gammon in a casserole dish with all the other ingredients and cover with two layers of foil.

  • Place the gammon into the oven and bake for an hour.

  • Remove from the oven and spoon the star anise and coffee sauce from the casserole dish into a small saucepan.

  • Over a medium heat, allow the sauce to reduce until it coats the back of a spoon.

  • Remove from the heat and pour the sauce over the gammon.

Baked Rosemary and Black Pepper Beetroot

  • Place the beetroot on a baking tray and drizzle with olive oil.

  • Place the butter between the beetroot and season with sea salt, black pepper and fresh chopped rosemary.

  • Bake in the oven at 200°C for 15 - 20 minutes.


  • Serve the gammon with the beetroot and garnish with fresh mint and a Greek yoghurt dressing.
