Pulled Pork and Sundried Tomato Cookies

Sundried tomatoes and smokey pulled pork mixed into a sweet cookie dough creates a #JustDelicious unexpected flavour combination.

Makes 18 cookies

Ingredients:

 

250 ml

Eskort Smoked Pulled Pork

65 ml (¼ C)

sundried tomato, chopped

375 ml (½ C)

flour

5 ml (1 t)

baking powder

3 ml (½ t)

salt

125 ml (½ C)

treacle sugar

90 ml (6 T)

castor sugar

5 ml (1 t)

vanilla essence

125 ml (½ C)

butter at room temperature

egg

Method:

  • Preheat the oven to 180°C.

  • In a large mixing bowl, add the sugar, butter, vanilla and egg then whisk together until well combined.

  • Sieve the flour, baking powder and salt into the butter mixture.

  • Combine with a wooden spoon until a ball of dough forms.

  • Add the pulled pork and sundried tomatoes, and mix well.

  • Shape into tablespoon-sized balls and press flat onto a greased baking tray.

  • Bake for 15 - 20 minutes until golden.

  • Remove from the oven and allow to cool before serving.

Serve

  • Store at room temperature and enjoy whenever you feel like having a #JustDelicious snack.
