handful | rocket leaves |
65 ml | blueberries |
½ | red onion, thinly sliced |
| oil for cooking |
Spinach and nut hummus |
|
125 ml | cashew nuts |
handful | spinach, chopped |
65 ml | olive oil |
1 can | chickpeas |
1 | lemon, zest and juice |
1 clove | garlic |
65 ml | chives |
30 ml | thyme |
| salt and pepper to taste |
Method:
Hummus
Place the hummus ingredients in a food processor and pulse until a smooth paste forms.
Assemble:
Add a little oil to a frying pan and fry the Eskort American Hot Dogs at moderate heat until golden brown.
Thinly slice the onion.
Generously spread spinach hummus on the wrap, add rocket, blueberries, hot dogs and red onion.
Fold the wrap and toast in a heated pan until golden brown and crispy. Serve warm.
